Okay, just had a hankering for pasta salad, so I got in the kitchen and here's what I ended up with.
All measurements are really approximate, maybe not even close to the real thing.
2 to 3 cups cooked pasta
3/4 cup of each of the following, cucumber, cut into bite size pieces, not slices, thinly sliced carrot, thinly sliced celery.
1/2 cup of both bell pepper and of onion, diced
1/2 cup of green olives with pimentos, I cut them in half lengthwise
1/2 cup of marinated mushrooms, cut into bite size pieces
Dressing;
about half a bottle of Greek salad dressing, mix with a splash of the marinade juice from the jar of mushrooms and enough mayonnaise to make it creamy enough to stick to the pasta.
1/2 pound of peeled, deveined shrimp steamed with Cavandars Greek seasoning.
I had medium size shrimp so after they were steamed and shocked in ice water, I cut them into three pieces. I just like all my ingredients to be sort of the same size so when I take a fork full, I get some variety of the salad.
Mix all together, cover in dressing, chill and enjoy. It turned out yummy on this the 34th day we've had of over 100 degrees.
